Leek and Bacon Puff Pastry

Ingredients
- 1 sheet puff pastry
- 1 leek
- 100 g diced bacon
- 1 tablespoon crème fraîche
- 30 g grated Gruyère or goat cheese
- 1 egg yolk
- Black pepper
- Nutmeg
Method
- Preheat the oven to 200°C.
- Wash the leek thoroughly, then slice it into thin rounds.
- Place the leek in a nonstick pan with a little water. Cover and cook over medium heat for about 10 minutes, stirring occasionally, until tender.
- Stir the crème fraîche and cheese into the cooked leek. Season with black pepper and nutmeg. Avoid adding salt because the bacon is already salty.
- Cook the bacon for a few minutes, then add it to the leek mixture.
- Divide the puff pastry into two equal pieces. Spoon the filling into the center of each piece, then fold and seal the pastry around it.
- Brush the pastries with egg yolk.
- Reduce the oven temperature to 180°C and bake for about 30 minutes, until puffed and golden.
Serving suggestion
Serve warm with a green salad for a light evening meal.
